Suran is also known as jimikand, surangaddi,kanda etc. There are many ways in which this tuber can be made. My mother used to make a vegetable that tasted exactly like mutton. Sliced into thin slices and shallow-fried, it makes a wonderful side dish in Goan cuisine called kappa or foddi.

Ingredients
3 ½ cups Elephant Foot Yam (chopped, suran or zimikand)
¼ teaspoon Turmeric Powder (haldi)
1 ½ tablespoons Coconut Oil (or any vegetable oil)
2 Dry Red Chilies (sookhi lal mirch, deseeded and broken or 1 to 2 green chilies, chopped)
1 teaspoon Mustard Seeds (rai)
1 teaspoon Urad Dal
½ teaspoon Cumin Seeds (jeera)
9 Curry Leaves (kadi patta)
4 tablespoons Fresh Coconut (grated)
1 ½ tablespoons Coriander Leaves (chopped, dhania patta)
1 Asafoetida (generous pinch, hing)
add Salt (as required)
add Enough Water (for pressure cooking or steaming the yam).
